Featured Wines Hall Sauvignon Blanc We select fruit primarily from a mélange of cooler climate vineyards in the valley to ensure complexity of fruit and a vibrant lift of acidity. Brilliant pale straw color with a hint of green, demonstrating the freshness of this wine as it was handled extremely carefully to avoid exposure to oxygen from harvest to bottle. The wine is bursting with ultra-ripe ruby red grapefruit, passion fruit, lychee, white peach, and banana aromas. The palate is bright and focused, suggesting citrus compote laced with white pepper spice. The mouth-watering finish is crisp and long, its peachy citrus notes echoing through to the next sip. VARIETAL COMPOSITION: 100% SAUVIGNON BLANCVINEYARD: A BLEND OF NAPA RIVER RANCH, HARDESTER AND A VINEYARD PARTNER AGING: 100% STAINLESS STEEL FERMENTATION Morning Fog Chardonnay Morning Fog Chardonnay is an great expression of Livermore Valley Chardonnay, with diverse alluvial fans of soil consistently creating Chardonnay with beautiful and lingering minerality, which coupled with the natural acidity from the long and cool growing season, creates a beautiful wine. Since 1883, five generations of our family have handcrafted fine wines that express the very best of our vineyards and winemaking expertise. Recognized as “California’s First Family of Chardonnay”, our family was the first in California to produce a varietally labeled Chardonnay made from our Wente clone. Today, many of the great Chardonnay vineyards in California are planted with the Wente clone, which originated from our family’s estate. Fermentaion: 50% of this wine was barrel fermented in neutral French, American and Eastern European oak. The other 50% was fermented in stainless steel tanks in order to preserve the natural fruit flavors inherent in this Chardonnay. Sanctuary Cabernet Sauvignon WINEMAKING Our Cabernet was fermented in tank and kept in contact with the skins for 25-28 days, after which the skins were pressed off in a basket press and the hard press kept separate. After 100% malolactic fermentation was completed, the wine was aged in French barrels for 14.5 months before bottling.
